Recipe of the day...Chicken penne pasta

You will need the following to get started:

  • 1 16oz. box Penne pasta
  • 1 1/2lb. Boneless, Skinless Chicken breast
  • 1 Bunch fresh Asparagus
  • 1 small jar Sun-dried Tomatoes, drained
  • 4tbls. Extra virgin olive oil
  • 2tbls. minced Garlic
  • Salt & Pepper

In large pot or pasta pot, add 6 qts water and bring to a boil. Throw in pasta and cook according to directions on box. Drain and return pasta back to pot.

Meanwhile, clean chicken under cold water and pat to dry. Cut chicken into thin strips.

In large saute pan, add 1 tbls. of olive oil and turn to medium high heat. When heated, toss in chicken and sprinkle with salt & pepper. Turning often, heat until thoroughly cooked (approx. 6-10 minutes).

While chicken is cooking, clean asparagus under cold water and trim ends. This means cut them about 2 inches from bottom. Place asparagus in a microwavable container with 2 tbls. of water and a dash of salt & pepper. Cover and microwave 4-6 minutes.

Add cooked asparagus, garlic, and sun-dried tomatoes(as many as you like) to saute pan with chicken. Pour 1 tbls. of olive oil over mixture to coat. Saute 2-3 minutes.

Now, add the chicken mixture into the past pot. Add remaining olive oil and a bit of salt & pepper and mix. Voila!

This meal goes great with your favorite Pino Grigio!

Here I go...

Okay so I started a blog. I know some will give me a hard time due to the fact I would not even open a myspace or facebook account. But here I go on display to talk about everything from politics to sports and everything in between. You will love it or hate it but either way I will keep you coming back for more. Or you could always choose not to read it.
